黄梨酥 pineapple tart

Ingredients:,PASTE,2 cans of pineapple chunks,100g castor sugar,1 cinnamon stick,,DOUGH,150g butter, cold and diced,75g icing sugar,1 egg yolk,30ml cold water,1 tsp vanilla essence,1/2 tsp salt,280g oil-purpose flour,50g corn flour,1 egg, beaten with pinch if salt fir egg wash,,Method:,PASTE,1. put blended pineapple, sugar and cinnamon stick in a pot. Cook by mixing continuously until dry. Set aside to cool.,DOUGH,2. Place dry ingredients in a bowl. Blend in butter until crumbly texture is achieved. add in yolk, vanilla essence and form into smooth dough. If the dough is crumbly, add a little water until it sticks again. Cover with plastic and chill for 20 minutes.,3. Roll the dough between 2 plastic sheets to 1/4 inch thickness. Stamp out wanted shapes and transfer to trays lined with baking paper,TART,4. Roll a teaspoon of cooked pineapple paste into a small ball and place it unto the stamped out dough.,5. Bake ina preheated oven at 175 degree celcius for 15 minutes until golden. Cool on wire racks.

材料:,1大匙油,1小匙蒜茸,700ml水,100g肉碎,300g菠菜,洗净,切小块,,腌料:,1/4小匙盐,1小匙生抽,少许胡椒粉,1小匙粟粉,,调味料:,1/2小匙盐,少许胡椒粉,2粒蛋,打散,,做法:,1. 肉碎加入腌料拌匀,备用。,2. 烧热油爆香蒜茸,加入水煮滚,再加入肉碎煮滚。,3. 加入菠菜和调味料煮滚,最后加入蛋液稍微搅拌,即可上桌享用。

材料:,50g肉碎,1小匙油,1/2小匙蒜茸,700ml水,1块水豆腐,切块,1/2条红萝卜,去皮,切粒,3朵鲜菇,切粒,5条甜豆,切小块,15只中虾,去壳和肠泥,,调味料:,1/2小匙盐,少许胡椒粉,,做法:,1. 肉碎加入少许盐,胡椒粉和麻油拌匀。,2. 烧热油爆香蒜茸,加入水煮滚,再加入肉碎和其余材料煮3分钟。,3. 加入调味料,即可上桌享用。

芋头鱼肉米粉

材料:,1条马友鱼800g, 切厚块,1杯炸油,1/2大匙蒜茸,6片姜,200g芋头,切块,100g菜心,1500ml水,,调味料:,1小匙盐,1大匙生抽,少许胡椒粉,300g米粉,浸软,,做法:,1. 烧热油,分别放入鱼和芋头炸至金黄色,捞起沥干油分。,2. 留1大匙油爆香蒜茸和姜,加入水,鱼和芋头煮滚,转小火煮10分钟。,3. 加入调味料,米粉和菜心煮滚即可上桌享用。

巧克力薄荷蛋糕 Chocolate Mint Cake

材料:,250g 牛油,120g 细砂糖,6粒 鸡蛋,1小罐 咖椰,4汤匙 炼奶,180g 面粉,1茶匙 薄荷香精,20克 巧克力粉(用热水溶解),1茶匙 班兰香精,,做法:,1. 把牛油和幼糖搅打至幼滑,把蛋逐一加入打匀。,2. 把面粉和发粉筛过,分两次加入牛油里。,3. 再把咖椰和炼奶加入充分搅拌。,4. 取出大约300g面糊,加入巧克力。,5. 其余加入班兰香精和薄荷香精。再把它分成两份(A)和(B)。,6. 再把(A)分成两份(每份大约4汤匙)。(B)那一份保留。,7. 把7寸四方形模底部铺纸四周涂油。,8. 先倒入4汤匙巧克力面糊用小火蒸10分钟至熟,记得盖上锡纸。,9. 再把第一份4汤匙的绿色面糊倒入,蒸熟。在倒入4汤匙巧克力面糊。,10. 倒入(B)绿色面糊。蒸15分钟。接着是巧克力,绿色。最后一层巧克力蒸至15分钟。

班兰九层糕 Pandan Kuih Lapis

材料:,300g木薯粉,40g粘米粉,600ml椰浆,200g砂糖,10片香兰叶,(剪成小片用搅拌机搅烂取之50ml精华),3-4片班兰叶,6inch 四方形不沾模,底部和四周围都涂上一层油,,做法:,1. 将砂糖和椰浆倒入锅里,加入3-4片 班兰叶用慢火煮至糖溶,但不要沸腾。,2. 待凉后加入分类搅拌均匀后过滤,确保粉浆无颗粒蒸出来才会滑。,3. 将粉浆平均分成两份,一份加入班兰精华,另外一份保留原色。,4. 白色粉浆分成4份,1份大约150g,班兰粉浆分成5份。,5. 预先煮热已涂了油的模。将一层班兰粉浆倒入模内用中小火蒸5分钟至透明。,6. 再把一层原色粉浆倒入,同样也蒸5分钟,继续将两种粉浆交替蒸至共9层。,7. 最后一层蒸至12分钟。,8. 待冷最少4个小时以上方可切开。,,备注: 每蒸一层需把粉浆搅拌以防粉浆沉底。,

材料:,1大匙油,1粒洋葱,去皮,切碎,5条香肠,切小粒,1/2粒红灯笼椒,切粒,2粒番茄,切块,1罐切块番茄,500ml水,1小匙糖,4碗热饭,,做法:,1. 烧热油,小火炒香洋葱,放入香肠炒香。,2. 加入其余材料煮滚,转小火继续煮15分钟。,3. 加入盐和糖拌匀,淋在白饭上,即可享用。
